Scrambled Egg & Chive Breakfast Sandwich

Ingredients (for one sandwich):

  • 1 brioche bun (I get mine from Trader Joe’s)

  • 2 large eggs

  • 1 tbsp. chives, chopped

  • 1 slice cheddar cheese

  • 1/3 yellow onion, sliced

  • 1/4 tsp. salt

  • 1/4 tsp. sugar

  • 3 tbsp. salted butter

  • 1 tbsp. Sriracha mayo

Directions:

  1. For the caramelized onions, melt 1 tbsp. butter in a frying pan over low heat. Add in the sliced onions, salt and sugar. Sauté until onions begin to soften and turn brown in color. Add about 1-2 tbsp. water to the frying pan and stir to deglaze the pan. This will pick up the brown bits off of the pan and add to the color of the caramelized onions. Once cooked, set onions aside.

  2. Slice your brioche bun in half and toast. Set aside.

  3. In a frying pan, add remaining 2 tbsp. butter over low heat and crack both eggs directly into the pan. Using a spatula, slowly stir, scrambling the eggs over low heat until they begin to cook. The trick is to scramble the eggs very slowly over low heat, letting the butter melt throughout the eggs during the process. When eggs are almost finished cooking, add in the chopped chives and continue to scramble. Remove eggs from heat and place on bottom half of brioche bun.

  4. Take your cheddar cheese and place it on the hot frying pan for about 10 seconds until cheese begins to sweat (don’t let it melt completely or else you will have trouble removing it from the pan). Add the slightly melted cheese on top of the scrambled egg.

  5. Spread the Sriracha mayo on top half of bun and place caramelized onions on top.

  6. Pro Tip: I like to add on a fried hashbrown for crunch (you can also get these from Trader Joe’s). Garlic chips or crispy shallot are also a great, crunchy addition!
