Shredded Sprouts Salad with Miso Dressing

Ingredients:

Miso Dressing:

  • 2-3 tbsp. mayonnaise

  • 1 tbsp. miso paste

  • 1/4 tsp. soy sauce

  • 1/4 tsp. Trader Joe’s Umami Powder

  • 1/4 tsp. honey

Quick Pickled Red Onion:

  • 1/2 red onion, sliced

  • 1/2 cup red wine vinegar

  • 1 tbsp. sugar

  • 1 tsp. salt

Shredded Sprouts Salad:

  • 2 cups shredded Brussels sprouts

  • 1/4 cup chopped cashews (or walnuts)

  • 1/4 cup blue cheese (optional)

  • 1/2 Asian pear, sliced (optional)

  • 1/4 cup pickled red onion

Directions:

  1. For the dressing, combine all ingredients in a bowl and whisk together. Add more honey to taste. If consistency is too thick, add a splash or two of cream.

  2. For the quick pickled red onions, add the red wine vinegar, sugar and salt to a pot and simmer on low for 1-2 minutes to let ingredients meld together. Pour the brine over the sliced red onions (preferably in a mason jar) and let sit for a minimum of 2-3 hours until onions become bright pink in color.

  3. Mix shredded sprouts with the chopped cashews and dressing. Top with blue cheese, pear and pickled red onion and serve!
