Shredded Sprouts Salad with Miso Dressing

Ingredients:
Miso Dressing:
2-3 tbsp. mayonnaise
1 tbsp. miso paste
1/4 tsp. soy sauce
1/4 tsp. Trader Joe’s Umami Powder
1/4 tsp. honey
Quick Pickled Red Onion:
1/2 red onion, sliced
1/2 cup red wine vinegar
1 tbsp. sugar
1 tsp. salt
Shredded Sprouts Salad:
2 cups shredded Brussels sprouts
1/4 cup chopped cashews (or walnuts)
1/4 cup blue cheese (optional)
1/2 Asian pear, sliced (optional)
1/4 cup pickled red onion
Directions:
For the dressing, combine all ingredients in a bowl and whisk together. Add more honey to taste. If consistency is too thick, add a splash or two of cream.
For the quick pickled red onions, add the red wine vinegar, sugar and salt to a pot and simmer on low for 1-2 minutes to let ingredients meld together. Pour the brine over the sliced red onions (preferably in a mason jar) and let sit for a minimum of 2-3 hours until onions become bright pink in color.
Mix shredded sprouts with the chopped cashews and dressing. Top with blue cheese, pear and pickled red onion and serve!
